Ingredients for the leek soup :
- 4 leeks , the green parts and one white part. Keep the rest for another recipe like mustard leek or cream leek.
- 1 big onion
- 4 garlic cloves
- 1 handful of parsley
- Chives
- salt, pepper, nutmeg ( to the taste)
- 1 big potato
- olive oil
Preparation for the leek soup
- Peel and cut the onion, peel and mince the garlic.
- In a pot on low heat, heat up slightly some olive oil. Then put the onions, stir regularly to make sure they don’t stick to the pot. Once the onions are translucid, add the minced garlic.
- While the onions are simmering, wash the leeks well, cut the extremities then cut the leek in pieces about 5 cm long.
- Once the onions and garlic are browned, add the leeks.
- Wash, peel and cut the potato, then add the pieces in the pot.
- Add the parsley and chives in the pot with the other vegetables.
- Add water in the pot until the vegetables are fully covered with water. Then turn the heat up and wait till it’s boiling. Then you lower the heat again. You’ll let it simmer for about 20 minutes, till the vegetables are soft.
- Once the soup is cooked, use a blender to blend the soup until smooth. Then boil the soup once again.
- Put the seasoning to your liking.
- Now, your delicious leek soup is ready. Serve hot and enjoy!
