The tarragon chicken is perfect if you have a simple chicken or when you want a quick meal after a long day.

With the leftovers of chicken or with chicken breast quickly cooked in a pan, you’ll only need cream and a lot of tarragon to make a quick meal. The chicken with salad and mashed potatoes croquettes or rice, will be a delicious and comforting meal. 

Ingredients for the tarragon chicken : 

  • a chicken 
  • a carton of cream 
  • 1 spoon of flour 
  • salt 
  • pepper
  • tarragon
  • chicken broth

For two people, its easier to take pieces of chicken. To make it easier to remove the skin and bones of the chicken, it’s easier to take chicken breast. Even if you can use chicken drumsticks or chicken legs. 

If you use chicken breast, you’ll need about 20 minutes to make everything. 

Preparation for the tarragon chicken :

  • In a pot, you’ll brown the chicken with salt and pepper.
  • Once the chicken browned, you cut the heat under the pot, then add one or two tablespoons of tarragon and let the chicken cool down. 
  • Once the chicken is cool down, you get the chicken out on a plate. It will be easier to remove the skin and bones. You take out the skin, the bones and the veins and pieces of gristle. We keep only the meat.
  • Put back the meat in the pot with broth and with a bit of water we will make a roux. We add flour, then the cream. 
  • Then, adjust the salt and pepper to our tastes. We cook and mix till the chicken is well cooked and the sauce coats the meat well.

To shred the chicken more easily, you can use the electric mixer, which will shred the chicken in tiny pieces. 

We serve the chicken with salad and croquettes.

To accompany the chicken, this is how to make the dressing for the salad. 

While the chicken is browning in the pot, peel and cut half an onion or echalote. Put it in the salad bowl and mix it with vinegar, a bit of oil and the spices and herbs of your choice. 

Mix it well then let it rest till its time to serve the meal. At that moment, you’ll add the salad, washed and dried.  

Letting the dressing rest is cold cooking the onions, that’s making them more soft to the taste. The herbs and spices infuse in the vinegar and oil, it’s making the dressing more flavorful.  The dry herbs are also moisturizing back and getting more soft with the oil. 

When the chicken is cooked and the sauce is done. It’s time to cook the croquettes. 

There, you have an easy and quick meal to eat, perfect for a week day. 

For the meal to be easier on the stomach and more balanced, you can propose a light soup as an entry and put digestive flour blend in the chicken sauce for digestion.
